Nachani Bhakari : (नाचणीची भाकरी)

भाकरी (Bhakari) हा शब्द ऐकताच समोर येते तो जाडसर पांढ-या रंगाचा, गोल पापुद्रा असलेला जवारीचा एक चविष्ट प्रकार. लहानपणी आपण सर्वजणांनी थोड्याफार फरकाने का होईना या भाकरीच्या पापुद्र्याला लोणच्याचा खार लावून किंवा तूप मीठ लावून नक्कीच स्वाद घेतला असेल. आजही मला हा प्रकार अतिशय आवडतो. असो...!!

आज मी तुम्हाला नाचणीच्या भाकरी (Naachnichi Bhaakari) बद्दल सांगणार आहे खरेतरं याचा उपयोग हा अतिस्थूल व्यक्तिंनी वजन कमी करण्यासाठी नाचणीची भाकरी लोणी काढलेले ताक घ्यावे. नाचणीची भाकरी ही पचायला हलकी असल्याने कोणत्याही आजारात चालते. विशेषत: गोवर, कांजिन्या या विकारात ती पथ्यकर आहे.

यासाठी लागणारे साहित्य : नाचणीचे पीठ, मीठ व पाणी

Nachnichi Bhakariकृति :

नाचणीचे पीठ चाळून घेउन त्यात थोड़े मीठ घालून पाण्याने घट्ट भिजवावे. जर पीठ दळून बरेच दिवस झाले असतील किंवा भाकरी चिराळायची भीती असेल तर पीठाची उकड़ काढावी. यासाठी एका कढईत दोन वाटया पाणी घ्यावे, ते उकळावे. त्यात थोड़े मीठ घालावे. त्या उकळत्या पाण्यात नाचणीचे पीठ ते दिड वाटी घालावे चांगले ढवळून झाकून ठेवावे. थोड़े गार झाल्यावर पीठ चांगले मळून घ्यावे. त्यातील एक मोठा आंब्याएवढा गोळा घेउन भाकरी थापावी नेहमीच्या भाकरीप्रमाने तव्यावर पीठाची बाजू वर येइल अशी तव्यावर टाकावी. भाकरी थोड़ी गरम झाली की पाणी फिरवावे नेहमीप्रमाने खालच्या बाजूने चांगली भाजली म्हणजे तव्यावरून काढून विस्तवावर भाजावी.

तुम्ही घरी फुलके भाजतात तसेही नाचणीचे फुलके (Nachaniche Fulake) करता येतील. खरेतरं हा प्रकार पिठलं आणि Nachnichi Bhakari असा जर बेत असेल तर मग काही विचारायलाच नको.

शेवग्याच्या (drumsticks) कोवळ्या पानांची भाजी : एक पथ्यकारक रेसिपी

होय! तुम्ही -याचदा शेवगा हे नांव ऐकलं असेल. याला Moringa Oleifera असेही म्हणतात. यालाच आपण सर्वजण इंग्रजीमधे drumsticks म्हणतो. हे एक अतिशय गुणकारी फळ. घरामधे करता येण्याजोगी शेवग्याच्या कोवळ्या पानांची भाजी .... चला एकदा याची कृति बघुन घ्या आणि स्वस्थ, आनंदी रहा .....

कृति:
शेवग्याची कोवळी पाने निवडून स्वच्छ धुवून घ्यावीत. नंतर बारीक चिरावित. एका कढईत तेल घेउन त्यात मोहरी, हिंग, हळद घालून फोडणी करावी. त्यात कांदा बारीक चिरून घालावा परतून घ्यावा. नंतर / लसूण पाकळ्या घालून परताव्यात. नंतर हिरव्या मिरचीचे मोठे तुकडे करून ते घालावेत. सर्व निट परतले गेल्यावर त्यात चिरलेली भाजी घालून परतावे. झाकण ठेवून वाफेवर शिजवावी. जरूर पडल्यासच पाणी घालावे. एक वाफ येउन गेल्यावर चविनूसार मीठ घालावे पुन्हा परतून झाकण ठेवावे. भाजी पूर्ण शिजल्यावर ओले खोबरे घालावे भाजी गँसवरून उतरवून घ्यावी.

उपयोग:
सर्व प्रकारच्या वात विकारावर शेवग्याची पालेभाजी पथ्यकर उपयुक्त आहे. बरेच दिवसाच्या तापातून उठल्यावर भूक पूर्ववत व्हावी म्हणून ही भाजी खावी. जेवल्यावर धाप लागणे, पोटात गँस धरणे, डोकेदुखी, डोळ्यांचे विकार यात या भाजीचा विशेष उपयोग होतो.
